How is it November already? After a super busy and indulgent Halloween week, I am excited to focus this week on eating tons of healthy food, lots of veggies, and of course – some lightened up treats!
Now on to this week’s meal plan! This week kicks off with delicious Make Ahead Steel Cut Oats and a Slow Cooker Sausage and Gnocchi Soup for dinner. Monday brings Zucchini Ricotta Pasta and Tuesday is Creamy Garlic Mushroom Chicken. Mid-week meals include Korean Beef Bulgogi Bowls and Cilantro Pesto Chicken Skewers. Finally to end the week, there are Turkey Burger Quesadillas and Parmesan Fish Sticks.

Make Ahead Steel Cut Oats: As it gets colder, I always crave more and more oatmeal and these steel cut oats always hit the spot. They are hearty, warm, and you can add any toppings you like.
Slow Cooker Sausage and Gnocchi Soup: This easy slow cooker soup is warm and comforting. Packed with lean chicken sausage, potato gnocchi, tomatoes, mushrooms, and spinach, it’s filling and really tasty.
Parmesan Fish Sticks: This takes the child classic frozen fish sticks to a whole new level. Coated in Parmesan cheese, these fish sticks are crispy, full of flavor, and so much better than the frozen store bought variety.
Korean Beef Bulgogi Bowls: We love anything with Korean flavors and this easy to make ground beef, veggie, and rice bowl with sweet and spicy flavors is so good.
